 dreamt of owning a vineyard and making his own spa
 rkling wine ever since the 1980s when as CEO of Sa
 insbury’s he was regularly touring the vineyards o
 f Champagne. It was there that he first met Hervé 
 Jestin\, at the time a young\, pioneering winemake
 r making a name for himself. It was not until 2012
  however\, and well into his retirement\, he final
 ly fulfilled this dream and\, in partnership with 
 his sons\, Mark &amp\; Julian\, planted five hecta
 res of vines on the family estate in Hampshire’s C
 andover Valley. &nbsp\;It felt entirely fitting th
 at the consultant winemaker should be Hervé Jestin
 \, by now one the world's most respected sparkling
  winemakers\, known for his relentless focus on qu
 ality and innovation\, his refined wines and his n
 on-interventionist and biodynamic approach.&nbsp\;

 .uk/">Candover Brook</a> is named after the chalk 
 stream that runs through the valley. Chalk streams
  are almost uniquely English and the chalk soil is
  the key defining element of the vineyard’s topogr
 aphy. The Candover Brook is one of the few remaini
 ng habitats of the rare English white-clawed crayf
 ish. Both the brook and its crayfish are celebrate
